Zucchini Balls
Zucchini "Meat" Balls
- 3 medium zucchini, grated
- 1 tbsp olive oil
- 2 garlic cloves, crushed
- 1/2 tsp salt
- 1/4 tsp pepper
Grate all 3 zucchini into a large bowl, using a cheese cloth squeeze out as much liquid from the grated zucchini as possible. In a large sauce pan over medium heat add olive oil and garlic, sauté until fragrant, about 30 seconds. Add grated zucchini, salt and pepper to sauce pan and cook for 3-5 minutes to cook off any remaining liquid.
- 1 1/2 cups bread crumbs
- 2 tsp Italian seasoning
- 2 large eggs, beaten
- 1/2 cup Parmesan cheese, grated
- 2-3 cups marinara sauce
Transfer mixture to large bowl. Add breadcrumbs, Italian seasoning, beaten eggs and cheese, mix until well combined. Line a large baking sheet with parchment paper. Brush olive oil onto parchment paper where you plan to line up your zucchini balls. Form balls to be slightly smaller than a golfball, makes roughly 25 balls. Once you have formed all your balls, brush the tops with more olive oil. Bake at 375 degrees Fahrenheit for 25 minutes, until golden brown. In a large sauce pan oven medium heat add marinara sauce, once the sauce is warm add the zucchini balls. Stir and simmer for 5-7 minutes, top with fresh basil and enjoy!
