Strawberry Vinaigrette

Strawberry Vinaigrette

  • 1 cup olive oil
  • ¼ tsp dried leaf tarragon, crumbed
  • ½ pt strawberries, hulled
  • 2 Tbsps balsamic vinegar
  • ¼ tsp pepper
  • ¼ tsp sugar
  • ½ tsp salt (optional)

Combine all ingredients in a food processor. Whirl until strawberries are pureed.  The dressing can be prepared ahead of time and refrigerated.  Stir before using.  Pour over salad.
