Strawberry Soup

  • 4 cups strawberries
  • 1 cup orange juice
  • 2 tsp instant tapioca
  • 1/8 tsp allspice
  • 1/8 tsp cinnamon
  • 1/2 cup sugar
  • 1 tsp grated lemon peel
  • 1 Tbsp lemon juice
  • 1 cup buttermilk

Puree strawberries. Combine puree with orange juice in saucepan. Remove about 1/4 cup mixture and combine with tapioca. Add tapioca mixture to puree in saucepan. Add allspice, cinnamon and sugar and cook and stir until mixture thickens. Remove from heat; add lemon peel, lemon juice and buttermilk. Cover and refrigerate 8 hours or overnight. Serve cold, garnished with berries. Serves 4 - Great for ladies' luncheon!
