Strawberry & Broccoli Orzo Pasta Salad
with Lemon Poppyseed Vinaigrette
- ¾ cup uncooked orzo pasta
- 1 Tbsp fresh squeezed lemon juice
- 1 cup fresh strawberries sliced
- 2 Tbsps red wine vinegar
- ¾ cup slivered almonds
- 2 Tbsps extra virgin olive oil
- Salt & pepper to taste
- 1 tsp honey
Vinaigrette: combine all ingredients in jar & shake well
Salad: Cook orzo pasta until al dente. Drain and rinse with cold water to cool. Toss in strawberries, broccoli, and slivered almonds. Drizzle with Lemon Poppyseed Vinaigrette and toss until evenly coated. Season with salt & pepper. Chill in refrigerator until ready to serve.
Optional: add chunks of chicken and double vinaigrette recipe.
