Raspberry Spinach Salad

  • 2 Tbsps raspberry vinegar
  • 2 Tbsps Triple B Raspberry Jam
  • 1/3 cup vegetable oil
  • ¾ lb. spinach. rinsed well & drained
  • ¾ cup whole toasted pecans
  • 1 cup fresh raspberries
  • 2 large kiwi peeled 7 sliced

With whisk or blender, blend vinegar and jam. Add salad oil in thin stream while whisking or blending. Set aside. Mix spinach, half of nuts, half of raspberries and all of dressing. Top salad with remaining nuts, berries and kiwi.  Mix again, before serving.  4 to 6 servings
