Overnight Blueberry Coffee Cake

  • 1 egg
  • ½ cup plus 2 tsps sugar, divided
  • 1-1/4 cups flour
  • 2 tsps baking powder
  • ¾ tsp salt
  • 1/3 cup milk
  • 3 Tbsps butter, melted
  • 1 cup fresh blueberries

 In mixing bowl, beat egg and ½ cup sugar. Combine flour, baking powder and salt; add alternately with milk to sugar mixture, beating well after each addition. Stir in butter. Fold in blueberries. Pour into greased 8” square pan; sprinkle with remaining sugar. Cover and chill overnight. Remove from refrigerator 30 minutes before baking. Bake at 350 degrees for 30-35 minutes. Yield: 9 servings.
