Last-Minute Shortcake

This treat is so quick because you make it in the microwave

  • 1 cup flour                   
  • ¼ cup butter
  • 3 Tbsps sugar               
  • 1 egg
  • 1 tsp baking powder     
  • 1/3 cup milk
  • ¼ tsp salt                     
  • Fresh sliced strawberries, Sweetened with sugar


In bowl combine dry ingredients; cut in butter until crumbly. Beat egg and milk; stir into flour mixture. Spoon into 5 individual micro-wave safe 4-oz. custard cups. Place all of the cups in microwave at once and cook on medium for 3 minutes. Rearrange and cook on high for 2-3 minutes or until the cakes test done with wooden toothpick.  Serve warm or at room temperature with strawberries and whipped cream, if desired.
