Fresh Strawberry Mousse

Easy & Fresh Strawberry Mousse

  • 1 3/4 cup coarsely chopped fresh strawberries
  • 1 tbsp unflavored powdered gelatin
  • 1 1/2 cup heavy whipping cream, cold
  • 3/4 cup powdered sugar

Pulse the strawberries in a food processor until pureed. Strain through sieve to discard seed *if you desire, totally optional. Transfer puree to a shallow, microwave safe dish, sprinkle gelatin over the puree and let sit for about 3-5 minutes. Heat the puree in the microwave in 10-second intervals, whisking after each interval, until smooth and warm. Set puree mixture aside. Whip the heavy whipping cream and powdered sugar with a mixer on high speed, until stiff peaks form. Add the strawberry puree mixture to the whipped cream and gently whip until well combined. Transfer your strawberry whipped cream mixture to 4 small ramekins, chill in the fridge for 5-6 hours or overnight. Yield: 4 servings
