Cucumber Corn Salad

Cucumber Corn Salad

  • 3 ears corn, cooked or raw
  • 5-6 sweet snack peppers
  • 1-2 cucumbers
  • 1/2 red onion
  • 1 medium tomato

If cooking corn, boil or steam for 2-3 minutes, if using raw corn skip this step. Cut off cob and place into a large bowl. Chop up remaining ingredients into desired sizes. Stir to combine. 

Dressing:

  • 1/4 cup Italian dressing
  • Juice 1/2 lemon
  • 1/4 tsp fresh ground pepper

Combine all ingredients into a small jar with lid, shake and pour over salad. Toss and enjoy!
