Caprese Zoodle Salad

Caprese Zoodle Salad

  • 2-3 medium zucchini, cut into Zoodles
  • 3/4 cup cherry tomatoes, halved
  • 12 mozzarella balls, havled
  • 1/2 cup thinly sliced basil leaves


  • 1 Tbsp lemon juice
  • 3 Tbsps balsamic vinegar
  • 2 Tbsps olive oil
  • 1 medium garlic clove, minced
  • Salt and pepper to taste

Place zoodles and tomatoes in large bowl. To make the marinade, pulse ingredients in a food processor until the garlic is smooth. Pour marinade over noodles and tomatoes. Toss to combine. Place in refrigerator to marinate for at least 10 minutes. Add mozzarella balls and basil to noodles and tomatoes, toss to combine and serve!
