Blueberry Spinach Salad

  • ½ cup vegetable oil
  • ¼ cup raspberry vinegar
  • 2 tsps Dijon mustard
  • ½ tsp salt
  • 1-10 oz. pkg fresh spinach
  • 4 oz. blue cheese, crumbled
  • 1 cup fresh blueberries
  • ½ cup chopped pecans, toasted
  • 1 cup mandarin oranges

Combine first 5 ingredients in jar. Cover with lid and shake well. In large bowl, toss remaining ingredients. Add dressing and toss gently; serve immediately. Yield: 6 – 8 servings
