Blackberry Slab Pie Squares

Homemade Blackberry Slab Pie Squares

Pie Crust:

  • 2 1/2 cups all purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, cold and cut into pieces
  • 4 oz ice water

Add flour, salt, butter into food processor or blender. Pulse until mixture comes together and is grainy. Transfer to bowl, add ice water while constantly stirring. Turn dough onto floured surface and bring together into a ball. Wrap with plastic wrap and place in fridge to chill for at least 2 hours. 

Filling:

  • 12 oz fresh Triple B Blackberries
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • Juice of 1 lemon

Combine all ingredients into a saucepan, place on medium heat and stir constantly. Cook mixture for about 10 minutes, until it thickens up like a loose jam. You can mash the berries or keep chunky! Let cool.

Assemble Slab Pie:

Preheat oven to 350 degrees Fahrenheit. Remove dough from fridge, cut in half, roll out one half of the dough into a roughly 9x13 inch rectangle. Spread the cool jam filling onto the dough, leaving about 1 inch of room along all edges. Roll out the other half of dough into roughly the same shape. Place the sheet of dough on top the other half. Pressing with your fingers along the edges to seal. Use an egg wash (1 egg, 1 tbsp water) and brush the surface of the slab pie. Bake for about 40 minutes, until the pastry becomes golden. Let chill and then glaze. For glaze, mix 1 cup powdered sugar with a few tbsps of water. Drizzle on top and cut into squares! Enjoy!
