Apple Butter French Toast Sandwiches

  • 1 cup low-fat milk
  • ½ tsp pumpkin pie spice
  • 2 large eggs + 2 large egg whites, lightly beaten
  • 1 Tbsp sugar
  • 1 tsp vanilla
  • 8 slices whole-wheat bread
  • Triple B Apple Butter
  • Nonstick cooking spray
  • Confectioner’s sugar

Preheat oven to 250 degrees. In large shallow dish, whisk together milk, eggs and egg whites, sugar, vanilla, and pumpkin pie spice.

Place 4 bread slices in milk mixture let soak 1 minute per side. Coat large nonstick skillet with cooking spray and heat over medium heat. Add soaked bread to skillet and cook until golden brown, about 8 minutes, flipping once. Transfer to wire rack set in rimmed baking sheet and place in oven. Cook remaining bread as above.

Spread each of 4 slices with Triple B Apple Butter. Top with remaining slices and dust with confectioner’s sugar. Serve immediately.
